Additional Information: Riboflavinyl glycosides open up new possibilities of combating the vitamin B2 deficiency prevailing in many parts of the developing and some parts of the developed regions of the world. The superior solubility and bioavailability of riboflavinyl glycosides have been discussed earlier. Thus, these glycosides will show better performance as vitamin supplements, than the parent compound riboflavin, which is considered the least soluble of the water-soluble vitamins. Enzymatic synthesis of glycosides presents a better option to chemical synthesis. Currently chemical preparation of glycosides has not met EC food regulations, and therefore chemical preparation of glycosides is not applicable in food industry. Thus, enzyme-catalyzed reactions make an excellent alternative (de Roode et al. 2003). In such a scenario, the present study, which attempts to synthesize glycosides of riboflavin by an enzymatic method, provides an insight to developing newer and more efficient processes.
