Abstract

Mango being one of the most important commercial fruits of India, considerable attention is being paid in recent years to the development of varieties with special characteristics suited for preservation, storage, etc. A large number of varieties (over about 1,000) are grown in various parts of the country, each having its own peculiar taste, flavour and consistency. Quite often one and the same type has been grown under different names in different parts of the country. In this connection, it was of interest to study the proximate composition of five important varieties of mangoes grown in the Salem region and assess their suitability for preservation in different forms.
