Abstract

Seeds of 5 okra cv., viz. Punjab-7, Pusa Sawani, Punjab Padmini, L-Sel-1 and Crimson Red developed by Punjab Agricultural University, Ludhiana were analysed for proximate composition. The seeds contained 18.83-20.18 oil and 20.2-23.2% protein. Seeds of cv. Punjab-7 were highest in oil content followed by Pusa Sawani and Punjab Padmini. Fractionation of the crude protein from seed meal of Pusa Sawani showed it to be rich in globulin and prolamine. Seed oils of the 3 cv. were examined for their characteristics and fatty acid composition. A positive Halphen colour test indicated the presence of cyclopropene fatty acids in the oil. The oil was composed of about 66-73% unsaturated fatty acids.
