Additional Information: With every bunch of banana that is harvested, the aerial pseudo stem becomes useless to support any more production and thus, it becomes a residue, accounting to almost equal weight of the one time produced banana bunch. Accordingly, ~20 million tons of banana pseudo stem (BPS) represent estimated quantum of residue produced in banana orchards. BPS is reported to contain starch that has been characterized. BPS in fresh form contain ~ 90% water ( after removal of external leaf sheaths), is a good source of dietary fiber and recommended for weekly consumption at homes, for removal of kidney stones particularly in men. Depending on the variety, BPS contains a range of phenolic compounds and varying in their quantities, but however very characteristic of discoloration of BPS, even when exposed for a while at atmospheric condition. Thus, any processing leads to further discoloration of BPS. Accordingly, the present study was instituted to have basic information on the quantitative spectrum of phenolic compounds particularly the system of spectrum of phenol oxidases, various factors influencing these phenoloxidase systems, so that eventual use of condition curtailing enzymatic discoloration could result in prevention of discoloration of BPS whilst processing.
