Abstract

Moisture sortion studies on coconut biscuit have indicated that moisture content of 5.5% (equilibrium relative humidity of 44%) is critical with respect to acceptability of texture. Packaging and storage studies of the product in individual unit packages of oriented polypropylene film and these packed in a bulk bag of high density polyethylene have been carried out at (i) 90% RH, 38°C, (ii) 25% RH and 40-42° and (iii) 65% RH and 27`C conditions. The polyethylene bag enhanced considerably the shelf-life of the product,
