Abstract
Sardine oil containing about 10% trisaturated and disaturated glycerides and about 29% saturated fatty acids throws out considerable quantity of "stearin" at room temperature (25°C). With a view to prepare a "stearin"-free sardine oil with high iodine volatile, solvent winterisation of sardine oil was tried. Of different solvents petroleum ether, hexane and acetone) tried, acetune was found to be most effective. Iodine value of oil could be raised to 217 from 167 by carrying out the process at -28°C. Saturated fatty acid contents of winterised oil was reduced to 17.4%.
