Abstract

The distribution of carotene and xanthophyll pigments in different fractions during preparation of leaf proteins from green vegetation of Madicago sativa and Dolichos lablab was studied. From the extracts, alInost all of the carotenes and only two-thirds of xanthophylls passed into the heat-coagulated materials. Storage studies showed serious losses with time, more in carotene than in xanthophylls. Among the two antioxidants, ascorbic acId and beta~ hydroxy anisole, the former was found to be a better stabilizer for carotenes, but neither showed any effects on xanthophylls. Incorporation of ascorbic acid (0,21 %) into leaf protein and storage in a refrigerator were found most suitable for conserving the carotenes.
