Abstract

The present study was undertaken to follow the deteriorative changes that take place when market samples of sun-dried salted mackerels are kept stored as such and next to find out the efficacy of certain bacteriostatic arid fungicidal subs tances on the keeping quality of sun-dried mackerel. Chlortetracycline as bacteriostatic agent, sorbic acid and sodium propionate as fungicidal agent, were tried. A mixture of sodium benzoate and sodium acid phosphate which have been reported to be highly effective in checking the growth of red~halophils was also tried.
