Abstract

Bakery industry in India is the largest of the food industries with an annual turnover of about Rs. 5,000 crores. The industry largely continues to be in the unorganized sector contributing to over 70% of the total production. The unorganized sector produces bakery products 2-3 times more than that produced by organized sector. The unorganized sector is managed by unskilled workers with little knowledge of the science and technology of baking. Lack of knowledge in the science will definitely impair the progress of the industries. The development of newer products would also be difficult. Keeping in view the above scenario, rural development training programmes sponsored by Council of Scientific and Industrial Research, New Delhi under Societal Mission Program are being conducted continuously from past 5 years by Central Food Research Technology Research Institute (CFTRI), Mysore. The bakery training programmes are conducted to train the rural entrepreneurs for the establishment of bakeries, aid in generation of employment in rural regions, create awareness in hygiene and sanitation in rural bakeries, help in diversification with production of variety products and impart knowledge on nutritional aspects of bakery products. Training programmes were conducted at various centers in Karnataka and Tamil Nadu with active cooperation of Non Governmental Organisations and Institutions. About 1077 rural entrepreneurs were trained. All the course material was translated into Kannada to enable the rural entrepreneurs understand better. The participants were given hands on experience where ever possible. All the training programmes were documented through photographic and video coverage.
