Abstract

Methyl linoleate [prepared from safflower oil] supported on cellulose was autoxidized at different aw for 22 days at 30 degree C and the formation of peroxides and carbonyls was followed. Peroxide values (PV) were considerably higher at high aw (325 and 108 at 0.79 and 0.92 aw resp.) and were comparatively low at other aw (43-69 between aw 0.02 and 0.71). The total carbonyls, dicarbonyls and mnonocarbonyls were high at low aw 0.02 and 0.32 as compared to other aw although the PV range was almost similar. The keto and semialdehyde esters were low at all aw. The study indicates that the rates of peroxide formation and breakdown are not similar at any aw. The course of the secondary reactions also varies with the aw of the system.
