Abstract
The enzymes involved in gluconeogenesis and organic acid metabolism in mango (Mangifera indica), orange (Citrus reticulata) and banana (Musa sapientum) at different stages of ripening have been investigated. Freshly harvested and fully mature fruits were used. It was observed that the activities of phosphenol pyruvate, carboxykinase (PEPCK), fructose diphosphatase (FD pase), glucose-6-phosphatase (G-6-pase) and glucosekinase increased significantly in mango at the climacteric (edible ripe) stage. PEPCK activity which increased 60-fold in mango did not show any increase in oranges. Phosphoenolpyruvate carboxylase (PEPC) increased 40-fold in ripening mango during post-climacteric period. In banana, PEPCK was observed in traces and a slight increase was observed in PEPC during climacteric and post-climacteric period.
