Abstract

Low yield of rice flakes in the traditional method of flaking is attributed to losses by breakage and powdering in the edge-runner. An additional idle roller was fitted to the edge-runner. This reduced the flaking time from 60 to 40 s and also the breakage from 5 to 3%, and at the optimum paddy moisture content of 22% just before flaking, consequently increased the yield from 65 to 67%. A small roller flaker was developed with an effective roller length of 10 cm and tested for performance at roller diam. of 15, 20.5, 28.5 and 27.5 cm and speeds of 600-700 cm/s and capacity of 40-50 kg/h. The optimal diam., peripheral speed and hardness were found to be 30 cm/, 650 cm/s, and 500 BHN (Brinell hardness number), resp. Capacity and power consumption of the small roller flaker/unit length are comparable to those of corn flaker (4.75 kg/h, and 0.13 kW/cm length). A small roller flaker with the edge-runner will facilitate fine flaking of coarse flakes, and increase the yield of flakes to 70%. The processing cost for the traditional process was 42 paise, traditional process with two idle rollers was 35 paise, traditional process with roller flaker as adjunct was 37 paise and for the continuous process 28 paise/kg of flake produced.
