Abstract
Effects of storing rum in 0.5- and 5.0-l high density polyethylene containers were studied under normal (27 plus/minus 1 degree C/RH 65 plus/minus 2%) and accelerated (38 plus/minus 1 degree C/RH 90 plus/minus 2%) conditions, using rum in glass bottles as the control. Changes in total wt. of the package, and ethanol and ester contents were measured at intervals; sensory evaluation was also carried out at the same time. No appreciable changes could be measured over a storage period of 195 days under normal conditions. Flavour of rum deteriorated noticeably after 90 days storage under accelerated conditions.
