Abstract
Moisture sorption and storage studies were carried out on a food blend based on corn, sugar and fat. The product had initial and critical moisture contents (dry wt.) of 5.4% and 8.2%, resp. The food blend, packaged (500 g) in low and high density polyethylene pouches (LDPE, HDPE) was stored for 41/2 months at 27 degree C/65% RH or 38 degree C/90% RH, and analysed for moisture, free fatty acids and peroxide values at intervals. In LDPE pouches the product had a shelf life of 11/2 months at 38 degree C/90% RH and 41/2 months at 27 degree C/65% RH; shelf-life was longer in HDPE pouches (greater than41/2 months) under both sets of storage conditions.
