Abstract

Packaging and storage studies on ground pepper and turmeric were conducted using pouches made from the following packaging materials: 200 and 350 gauge polypropylene, 250 gauge low density printed polyethylene (PE), double pouch of MSAT cellophane inside and 250 gauge printed PE pouch outside, and double pouch of glassine gusset pouch inside and 250 gauge printed PE outside. Storage was at 92% RH/38 degree C, 30-40% RH/40 degree C or 65% RH/27 degree C. Results indicated that a storage moisture content of about 12.0% (dry wt. basis) for both the spice powders was safe with respect to free flow characteristics and microbial spoilage. Polypropylene pouches offered inadequate (though slightly better than low density PE) protection against volatile oil and moisture losses during storage; with polypropylene, at high temp., nearly 60-70% of volatile oil in turmeric and 70-80% in pepper was lost during 150 and 130 days of storage, resp., vs. 30-43 and 49% resp. in PE/MSAT cellophane and 80% in PE/glassine (pepper only). The PE and polypropylene packs became sticky, with oil droplets collecting on the surface during storage, and smudging and disfiguring of the printing in the case of the PE pouches containing dried turmeric.
