Abstract

5 characteristic patterns of degradation were observed, and are described, for milled rice grains of different var. immersed in dil. KOH solution. 2 of the patterns are photographically illustrated. Relation of these patterns to other quality indices of rice, such as amylose content, relative breakdwon, stickiness and consistency is discussed, and it is concluded that the simple alkali degradation is of value as a rapid test for overall rice quality.
