Abstract

Pilot scale investigations were undertaken to standardize conditions (peeling, pulping, preheating, cooling, enzyme addition, juice separation, filling and pasteurization and for examining the suitability of equipment) for processing bananas. A pectinolytic enzyme concentrate (PEC) (PEC activity greater than 70 (x 20) units/ml, active over pH range 2.5-6.0). Manual peeling was found to be most suitable, as no equipment was satisfactory. An APV type fruit pulper proved suitable for pulp preservation, although the pulp had to be run twice through the pulper. Use of tubular heat exchangers with tubes of less than 16 mm diam. ensured uniform heating of the pulp. For circulating the pulp, screw type mono pumps with positive displacement and of the non-clogging type were needed during heating and cooling. An open type reaction vessel with provision for agitation was required for addition of enzyme. A plate and frame type filter press, with Hyflow Supercel filter aids, may be used for juice extraction. Any commercial juice filler will serve to bottle the juice; batch and continuous type pasteurizers may be employed.
