Abstract

Baker's yeast was grown on molasses media and in 200-l and 4000-l non-agitated fermenters; Kono's model [see Kono, T., Biotechnology and Bioengineering (1968) 10, 105] was applied to calculate growth characteristics of the cell and yeast concn. Fermentation was carried out for 17-20 h; the growth rate equation and integral form for 4 growth phases (induction, transient, exponential and declining) are given and the methods for calculating cell concn. in these phases are delineated with examples. Cell concn. in batch scales from 10-l to 30 000-l fermenters can be estimated by the equation.
