Abstract

The extractability of proteins from mustard seed cake (Brassica juncea) in various aqueous solvents was determined. The total proteins were characterized by 3 methods: ultracentrifugation revealed the presence of 2 components whereas gel filtration and gel electrophoresis indicated greater than 2 fractions. A method is described for separation of the 2 protein fractions. Their homogeneity as well as some physiochemical properties were determined.
