Abstract

Moisture sorption behaviour of several cereal flours and dhals, and flours of pulses were determined at different RH (11-92%) at 27 degree C inside desiccators before selecting suitable packaging material. The dhals and flours of pulses were packed in unit packs of 500 g in low density polyethylene film (LDPE) (400 gauge) and stored under normal (27 plus/minus 1 degree C and 65 plus/minus 2% RH) and accelerated (38 plus/minus 1 degree C and 92 plus/minus 2% RH) conditions. Wheat flour (atta) and maida (refined wheat flour) were also packed in LDPE (350 gauge) and high density polyethylene (HDPE) (200 gauge) and polycell film pouches separately and stored for 190 days under normal (27 degree C) and accelerated (38 degree C) conditions. Pulse and cereal flours exhibited typical sigmoid sorption behaviour; moisture contents of 15% for pulses and 14% for cereal flours are critical with respect to physico-chemical and microbiological spoilage. LDPE pouches of 400 gauge are suitable for packing pulse dhals and flours in unit packs and for storing 8-10 months and for 3-4 months resp. Wheat flour can be packed in 200 gauge LDPE or HDPE for 3-4 months under accelerated storage conditions and in kraft paper for normal storage conditions.
