Abstract
Ginger (Zingiber officinale) var. from hilly regions of India were examined. The possibility of using dried ginger for the production of ginger oil and oleoresin was examined. The determination of oil by the Clevenger distillation method and oleoresin by cold percolation extraction of the ground spice in small glass columns using ethylene dichloride as solvent, gave normal yields of oil and oleoresin.
