Abstract

The amounts and distribution of food processing waste and by-products are surveyed with a view to their industrial utilization. Tabulated data present: the areas and production of important fruits and vegetables and their products; the nature of wastes and by-products; processes developed at the Central Food Technological Research Institute for using mango, citrus, papaya, apple pomace and pineapple waste; distribution of large fruit and vegetable processing units; and the type, amounts and present utilization of waste at important processing centres.
