Abstract
This review includes the following sections on the mechanism of corrosion in food cans (plain, or lacquered): the influence of food constituents (organic acids, anthocyanin pigments, tannins); effect of food ingredients (sugar, salt, dyes, complexing agents); nitrate induced corrosion; processing variables (headspace, headspace oxygen, vacuum, insufficient exhaustion, filling temp., cooling and storage conditions); S staining; tinplate variables (composition of steel base plate, electrolytic tinplate, thickness of tin coating, Grade K tinplate, High Tin Fillet can, porosity of tinplate, Sn-Fe compound layer, grain structure of the Sn coating); toxicity of Sn; inhibition of corrosion (inhibitors, dissolved Sn ions, lacquers, passivation treatment); and measurement of corrosion.
