Abstract

The effects of the following processing variables on internal corrosion of mango juice cans during 12 months storage were studied: filling temp., exhausting, deaeration, time lag between sealing and processing, processing time, cooling water temp., agitation, NO3--, pulp concn., citrate and acidity. Results are tabulated. Corrosion was reduced by deaeration of mango juice before filling into cans, and to some extent (in initial stages) by exhaustion of full cans before sealing, reduction in processing time and increase in pulp concn. It was accelerated by time lag between sealing and processing, high cooling water temp., presence of greater than 5 ppm NO3-- and increased acidity. Reduced filling temp. or processing time, intermittent agitation and sodium citrate had no significant effect.
