Abstract
The pattern of changes in silica, ash, crude fibre, whiteness and residual bran pigments with progessive polish were studied in seven varieties of paddy. The constituents studied decreased or increased in a characteristic manner as the degree of polish was increased from 1 to 6 per cent. Silica and crude fibre content reached low and constant residual values at 6 per cent degree of polish and could serve as useful indicators of the degree of milling. For checking underpolishing below 3-4 per cent and over polishing above 3-4 per cent silica content and whiteness or reflectance value of the rice may serve as useful parameters with least varietal variations.
