Abstract

Experimental work following up a survey on marketing of poultry in India, showed rapid multiplication of microorganisms in chilled, dressed poultry. Transport times are often greater than 24 h, the poulty being delivered in insulated or refrigerated trucks from the dressing plant to the retailer. Addition of 10 ppm chlortetracycline to the packing ice proved effective in restricting the microbial load for 24 h. Thus, mesophilic and psychrophilic counts after 24 h were 2.8 x 10-6 and 3.5 x 10-4 respectively for poulty packed in ice without chlortetracycline, vs. 1.2 x 10-3 for poultry packed in ice with the antibiotic.
