Abstract
To overcome the shortage of milk in India, buffalo or cow's milk is toned with imported reconstituted skim milk powder. Miltone, a vegetable-toned milk, was developed to replace imported skim milk powder with indigenous peanut protein. The process for production of Miltone and Miltone's characteristics, including its ability to form cruds, are described. Miltone can be made available at a price 15-20% cheaper than skim milk powder-toned milk and 25-30% cheaper than pasteurized full-fat milk.
