Abstract
The protein efficiency ratio and overall nutritive value of blends of wheat and Bengal gram flours in various proportions; 80:20; 70:30; and 40:60; were determined using albino rats. The protein contents (dry basis) of the blends were 14.5%, 16.1% and 20.7% respectively. Results indicate that a blend of 80 parts wheat and 20 parts Bengal gram containing 14.0% protein would be adequate for growing children when supplemented with vitamins and minerals.
