Abstract

A survey was made of the quality of eggs as sold in Mysore city markets. Eggs sold during the summer were of poorer quality than during other seasons. Average wt./egg and average shell thickness were 37.9 g and 0.349 mm for summer eggs, 45.2-48.7 g and 0.353-0.359 mm for other seasons. External shell appearance was generally good during the summer, spring, and winter seasons, but dirty during the rainy season. Internal quality, as measured by albumen index, yolk index, % thick albumen and Haugh units, was also lowest during summer and highest for spring eggs. Microbial loads determined as total plate counts (methods and media not given) are recorded as (i) external as number bacteria/1 egg surface and (ii) internal as number bacteria/g whole egg liquid. Highest average figures were (i) 1.5 x 10-7 and (ii) 3.6 x 10-4 in summer, the lowest were (i) 1.1 x 10-6 and (ii) 8.1 x 10-2 in spring. Prolonged exposure to atmospheric temp. and dirty transport packaging materials are suggested as important factors.
