Abstract
Lactobacillus plantarum NCIM 2084 cells immobilized on chitosan-treated polypropylene matrix were used for lactic acid production during repeated batch fermentation in flasks. Physiological and morphological changes in the immobilized cells were studied. The L. plantarum cells were homofermentative, essentially producing lactic acid as the main end product of glucose fermentation. Prolonged use of the immobilized cells through repeated batch fermentation produced a shift in the metabolic pathway from homofermentative to heterofermentative; this was accompanied by morphological changes in the immobilized cells from the normal rod shape to a coccoid shape. These changes appear to be related to a shift in bacterial cell metabolism, resulting in a decrease in lactic acid yields.
