Abstract

Shrikand, a sweetened lactic-fermented milk product manufactured in India, is highly susceptible to contamination by foodborne pathogens. In this study, effects of pediocin K7 from Pediococcus acidilactici CFR K7 on growth of Listeria monocytogenes Scott A in shrikand were investigated. Predictive modelling of L. monocytogenes growth behaviour was carried out using response surface plots under the influence of 4 variables: intitial inoculum concn. (3.3-7.3 log10 cfu/g); storage temp. (4-28C); storage time (24-120 h); and pediocin K7 concn. (11-23%). The precictions were validated in food systems. The model predicted that growth of L. monocytogenes Scott A would be inhibited at higher storage temp., longer storage time and higher concn. of pediocin K7. Statistical analysis of experimental values obtained for growth of the pathogen in shrikand demonstrated good agreement with counts predicted by the model, with the majority of the predictions being fail-safe.
