Abstract

A dedicated microprocessor control system for control of food sterilization in a vertically still retort is described. The system is targeted mainly at small to medium food processing establishments having manually operated batch retorts. Described as compact, rugged and economical, the system can easily be added on to an existing vertical retort. It consists of 3 modes: retort temp. control; food container temp. control with on-line Fo (integrated sterilizing value) display; and continuous on-line Fo display with retort temp. control. Use of the system enables control of sterilization until the predetermined Fo is reached; cooling is automatically started at the end of the heating process. Correct operation of the system ensures optimum sterilization, leading to increased nutrient retention and energy efficiency. It is concluded that small programmed changes to the system could enable it to be used for other thermal processes involving use of hot water or steam/air mixtures.
