Abstract

Previous research on groundnut oil suggests that its shelf life is affected by the type of packaging material used. However, whilst tin plate food cans are effective for product preservation, they are more expensive to produce than 'tin-free steel' cans which are made from chromium oxide coated steel plate. The suitability of tin-free steel cans for groundnut oil storage was investigated. Groundnut oil was packaged in tin plate and tin-free steel containers coated with epoxy-phenolic lacquer and stored at either 4 or 37
