Abstract

In vitro interactions of aflatoxin B1 (AFB1) with 3 protein fractions (arachin and conarachin I and II) were studied. Peanuts (Arachis hypogaea L.) var. TMV-2 were used. Binding of AFB1 with peanut protein fractions was evaluated by following the quenching of protein fluorescence. ABF1 quenched intrinsic tryptophanyl fluorescence of the proteins. Association constants of the interaction were 3.5
