Abstract
The food extruder is described briefly, and advantages of food extrusion, single screw vs. twin-screw extruders, assessment of the quality of extruded products, and possible industrial applications of food extrusion technology in India are discussed. The wide range of food products obtainable through extrusion are covered in brief.
