Abstract

For 8 weeks groups of 10 rats were given diets rich in hydrogenated fat, 20%, and in cholesterol, 1% and bile acids, 0.2%. The 4 diets differed in having casein 15 and sucrose 60.8% for controls, or cowpea (Vigna unguiculata) whole flour 75.8%, or defatted cowpea flour 70.8 and sucrose 5%, or lipid extract of cowpea 3, casein 15 and sucrose 57.8%. There was no significant difference between groups in mean daily intake of feed or gain of bodyweight. Each cowpea product decreased the concentration of total and free cholesterol in serum and in liver, and increased the amount of total bile acids excreted in mg/kg bodyweight in 24 h, beyond those of controls. There was no significant difference between groups in the concentration of lipid phosphorus in serum. Extraction with hexane would have removed only the neutral lipids from the defatted flour. The effect of cowpea in decreasing cholesterol in tissue may be due to several of the constituents.
