Abstract

Wistar rats weighing 160 to 190 g, trained to eat 10 g diet in 1 h, were given a meal with 15% protein supplied by green gram (Phaseolus aureas), chickpea (Cicer arietinum) or cowpea (Vigna sinensis), ungerminated and raw or germinated for 24, 48 and 72 h and cooked. The rats were killed after 4 h and flatus was estimated in different parts of the gastrointestinal tract. There was significantly less flatus with the cooked than with the raw diets. Germination did not affect flatus with green gram and cowpea, but there was an increase in flatus in rats on chickpea germinated for 72 h. There was more stomach gas with the control diet, which contained casein, than with legume diets. N2 was the main constituent of flatus in rats on the casein diet, whereas it was CO2 in those on legume diets.
