Additional Information: | By-product utilization has gained lot of importance in food grain processing industries, which have sizable quantity of by-products. It is estimated that about 2.5 million tons of by-products are generated annually from dhal mills in India. About 50% of total pulses produced in India are Bengal gram. Among pulses, only Bengal gram and peas are used for puffing, which is done by HTST (High temperature and short time) treatments. By-products from grain and wheat milling industry find use in poultry feed blends and also as an additive to flours for human consumption. By-products of dhal processing industry can utilized for value added products. Para iron deficiency anemia is a wide spread nutritional problem mainly in developing countries. Among factors which lead to iron deficiency, low availability of dietary iron is considered to be very important. Chekurmanis leaves are reported to have an iron content of ~ 28mg per 100g. Therefore, an attempt has been made to utilize the brokens from puffed Bengal gram industries and it was supplemented with iron rich chekurmanis (Sauropus androgynus) leaves, formulating a popular food adjunct namely chutney powder. Nutrients in puffed Bengal gram broken and chekurmanis leaves were estimated and also in formulated chutney powder. Iron content in the product and its bio- availability was also estimated. |
