Additional Information: The physico-chemical characteristics of some edible oils, linseed oil and its fatty acids were carried out in the project. Linseed oil extracted by using solvent and by expeller pressing of linseeds was used for the autoxidation study. The results indicated that fatty acids in the form of triglycerides (linseed oil) undergo oxidation at a slower rate when compared to the free fatty acids (linseed fatty acids). From this work, it has been shown that autoxidation of linseed oil occur very rapidly followed by its polymerisation.
