Additional Information: | There is considerable interest from the pharmaceutical industries as well as food industry to take advantage of the beneficial properties of galactooligosaccharides and its products.This study reports that the intracellular β-galactosidase produced by Lactobacillus spp. (Reddy et al., 2007) a kanjika isolate from CFTRI grown on reconstituted MRS broth was capable of performing transgalactosylation reaction with lactose as substrate. Under the optimized conditions the GOS yield is 34.5% which is quite significant. An HPLC and ESI/MS result indicates that the GOS mixture contains G3, G4, and G5. There is convincing evidence from the immobisation experiments that the monosaccharides and lactose can be removed from the reaction mixture by immobilized Lactobacillus beads. Further studies require improvement of enzmye yield, production of high content GOS and scale-up the GOS production. |
