Additional Information: Exploring new sources of nutritional and nutraceutical potential rich foods particularly from plants are having immense value in functional foods sector at Global market. Though plants such as Tinospora cordifolia are highly exploited by pharmaceutical community for its medicinal properties, the fruits of this plant are untouched till today. Similarly Santalum album is known for its wood and sandal wood oil. Scanty report on edible nature of its fruits motivated to exploit its nutritional potential. Rivina humilis is known as a pokeweed through out the world and introduced in India in 1930’s and spread through migratory birds. Till today this plant’s potential is unknown to scientific community. For the first time an investigation has been carried out to find out the pigment profiles of all these three plants fruits and also the mineral contents of respective fruit extracts. Our findings revealed that the fruits of T. cordifolia are rich in carotenoids, S. album fruit extracts are rich in anthocyanins and R. humilis fruits extracts are a good source of betalains group pigments. The nutritional potential of these fruit extracts were further substantiated by their biochemical and minerals profiles most of which are on par with recommended levels. The attempts to find out their nutraceutical potential through antioxidant and other assays revealed their potential as free radical scavengers.
