Additional Information: Rapid Cooling of egg was simulated using an axi-symmetric unsteady state finite volume heat transfer model. The egg was assumed to be a composite system of elliptical shape, consisting of yolk, albumen and shell, each isotropic. Simulated temperature profiles were compared with experimentally obtained data and showed good agreement. The numerical simulation was used to gain an understanding of the two processes encompassed by rapid cooling and equilibration.
