Additional Information: Today, pectinases have the major market share of enzymes. During the last three decades, pectinases have been exploited by the starch processing industry as a replacement for acid hydrolysis in the production of starch hydrolysates. This enzyme is also used for the removal of starch in beer, fruit juices or from cloths and porcelain. Despite the use of pectinases in a wide variety of technical applications, there have not been many new developments. Genetic engineering approaches are required to develop the enzyme with desired characteristics for specific purpose. The main aim of present work is to isolate the yeast which produses pecinase enzyme. Out of 15 yeasts cultures 7 cultures shows pectinase activity by producing halo region around them. Secretion of polygalacturonase enzyme by yeast was also investigated in 0.1% pectin media. The highest amount of PGase was found to be produced by the culture no. 55 and others produces scares amount. The cultures 52, 57 show maximum growth in pectin and YEPD media. At initially they utilize glucose as a source of carbon later shift over to pectin and produces pectinase enzyme in order to degrade the pectin. The culture 45 and 49 produces higher concentration of pectinase after some period of growth. Further work on these culture would throw light on the genetic variability of pectic enzymes in yeast.
