Additional Information: Fish processing generates considerable quantities of waste in the form of head, viscera, scale and skin etc. These inedible by-products harbour various types of microorganisms both harmful as well as beneficial types. Lactic acid bacteria (LAB) are the beneficial organisms present in the most of the natural products and fish waste is not an exception. This study was carried out to issolate and characterize the LAB from industrial fish waste (viscera). The isolated LAB was identified by different biochemical tested and was also tested for their antimicrobial action against selected human pathogens. The LAB isolated from fish waste could be grouped into two major groups based on the specific tests to Pediococcus and Enterococcus. Nearly 80% - 85% of isolates belongs to Enterococci. The LAB isolates were found to possess antibacterial property against Listeria and E. coli. Native LAB present in these processing wastes could also be useful in the fermentation process.
