Additional Information: Carotenoids are a class of fat-soluble pigments found principally in plants, algae, photosynthetic bacteria and animals and are responsible for the colors in fruits, vegetables, fish, crustaceans, egg and other plant and animals. The occurrence of carotenoids in animals is due to their incorporation from the diets as animals are not able to synthesize carotenoids. In animals carotenoids provide bright coloration and also serve as antioxidants and can be a source of vitamin A. Carotenoid are known to possess various biological functions, such as antioxidant activity, anticancer activity, anti-inflammatory activity, etc. Many of the reports available on the biofunctions of carotenoids deals with that of pure carotenoids. Shrimp waste is an important source of natural carotenoids, particularly that of astaxanthin. The carotenoid extract from shrimp waste is a mixture of carotenoids. The solvent extraction of carotenoids from shrimp waste may also result in extraction of other antioxidative compounds. Against this background this study was carried out to evaluate the antioxidant activity of crude carotenoid extract and its fraction from the discards (head, body shell and mixed waste) of shrimp processing, using different antioxidant assays.
