Additional Information: Coffee pulp, a by-product of coffee processing has good potential for production of pectinase by solid state fermentation using Aspergillus oryzae. Robusta Coffee beans have harder core of mucilage compared to the Arabica coffee and hence take longer time for fermentation process (36-72 h). To enhance the robusta processing quality and also conserve time for further operation of secondary processing demucilization is prime factor. In this investigation we have aimed at production of pectinase from coffee pulp and application of these enzymes in removal of the mucilage of robusta coffee so as to reduce fermentation time. The results obtained indicate that coffee pulp as a sole source of carbon produced 249.66 IU/g of pectinases. Optimized for enzyme parameters such as medium (sodium citrate buffer) pH (4.5), temperature (50°C), time (15 min) was carried out. The enzyme was decolorized using activated carbon (1:20) and treated for demucilization. The robusta coffee demucilazation on application with enzymes was complete within 3h. Pectinases from coffee pulp and application of them on demucilzation improves primary processing of robusta coffee, also the bioresource utilization in a form of value addition and abates environmental pollution.
