Additional Information: Tinospora cordifolia possesses various medicinal and nutraceutical properties like, antioxidant, antidiebetic, anti-inflammatory, antistress, lever protecting, etc., so, it is widely used in Ayurvedic preparations. These effects are exhibited by virtue of the presence of various compounds classified as alkaloids, glycosides, steroids, sesquiterpenoid, aliphatic compound, lactones, diterpenoid, bitter compounds, etc. There lies an enormous scope for utilizing the above mentioned properties into various kinds of formulations and food products. In present study, an attempt was made to find the antioxidant profile, testing the suitability of different methods of drying of leaves, separation and incorporation of the dried leaves into cookies at different levels thereby finding out the optimum level of incorporation and testing for different parameters.
