Additional Information: | Beer is a fermented beverage and it is one of the most widely consumed alcoholic beverage in the world. Pasteurization is one of the most vital unit operation in beer processing and it is heat treatment process which inactivates the harmful microorganisms present in the beer and extends the shelf life of beer. Computational fluid dynamics (CFD) modeling can be used as a tool to determine the temperature distribution pattern inside the bottled beer during its thermal processing. Experimental studies and CFD simulations were performed on the thermal pasteurization of beer at 60°C and the temperature predictions was validated with experimental measurements of the temperature. Based on the temperature distribution inside the bottle the slowest heating zone (SHZ) was tracked down and as a result of convective heating the SHZ was pushed towards the bottom of the bottle. The effect of bottle shape on the SHZ and Pasteurization Unit (PU) was investigated and PU values were found to be higher in long neck bottle, SHZ was found to be located at the bottle bottom in both bottles and hence the bottle shape does not have any effect on the location of SHZ. Further, Tunnel pasteurizer with 7 zones was selected and temperature profile inside the bottled beer was predicted for each zone and validated with the available theoretical data. Further, progress of the pasteurization process was evaluated by calculating PU values for all zones and obtained PU value of 19 was sufficient to achieve the required sterility. |
