Abstract
Hecently, there has been a considerable amount of awakening as regards the importance of fruit and vegetable preservation industry in the development of the country. The technical as well as the fundamental aspects of the subject are receiving much attention in different research centres in the country. An attempt has been made to review the results of this work under different heads.
