Abstract
Monascus purpureus is traditionally known as red yeast rice in East Asia particularly in China and Japan. Red yeast rice has been used in China for centuries as food, food colorant, medicine as well as preservative. Monascus purpureus and its mutant were found to produce pigments and various bioactive compounds like statin, GABA,Citrinin, anti-oxidant, steroids, fatty acids . Monascus can be cultivated on substrates that are in starch. Researches have revealed that statin plays a vital role in the reduction of cholesterol levels .In this study Monascus purpureus was grown in solid as well as submerged state fermentation. the production of bio pigment and statin. The main objective of the study is to enhance the production of Polyketide pigments and statin yeild . The growth of microorganism was observed during the incubation period. In Submerged fermentation Monascus purpureus red mutant resulted in high Pigment Production. Monascus purpureus MTCC 410 resulted high pigment yield 6900 (OD units/g dry fermented rice) on 11th day of Fermentation and Monascus purpureus red mutant resulted high pigment yield 14,290 (OD units/g dry biomass) on 7th day of incubation. Monocloin production in Monascus purpureus Red mutant was about 70 (mg/g of dry fermented rice) and in Monascus purpureus MTCC 410 it was about 12.307(mg/g of dry fermented rice). Monocolin production was high in Monascus purpureus Red mutant on Solid State fermentation. Monascus purpureus red mutant showed high pigment yield on 12th day of fermentation (6488.71 (OD units/g dry fermented rice) . Monocolin production by Monascus purpureus MTCC 410 and its red mutant was high on 12th day of fermentation. In both Submerged and Soild State fermentation , Monascus purpureus red mutant showed high pigmentation.
